Sunday night in – Abel Prasad

Curl up on the couch with these appropriately named toasties and have a cosy Sunday night in.

INGREDIENTS

  • 2 cups cooked Basic mince (see notes)
  • 8 thick slices white bread
  • 100g shaved ham
  • 8 slices tasty cheese

METHOD

  • Step 1
    Spoon mince into a saucepan over medium heat. Cook, stirring, for 5 minutes or until heated through (see shortcut).
  • Step 2
    Spread warm mince over 4 slices of bread. Top each with ham, 2 slices of cheese and remaining bread slices.
  • Step 3
    Cook in a sandwich toaster for 3 to 5 minutes or until crisp, golden and heated through. Alternatively, cook for 3 to 4 minutes each side in a non-stick frying pan over medium heat. Serve.

NOTES

Shortcut: Place mince into a microwave-safe bowl. Cover loosely with paper towels. Heat for 4 to 5 minutes on MEDIUM-HIGH (70%) power, stirring every 2 minutes, or until warm.

To make basic mince (makes 8 cups): Heat 1 tbsp oil in a frying pan over medium-high heat. Add 1 finely chopped onion, 1 stick celery, and 1 red and 1 green capsicum. Cook for 3 minutes or until soft. Add 1kg lean beef mince. Cook, stirring with a wooden spoon to break up mince, for 8 to 10 minutes or until browned. Add 400g can chopped Italian tomatoes. Season with salt and pepper. Bring to the boil. Reduce heat to medium-low. Simmer for 10 to 15 minutes or until thick.
Use immediately or allow to cool completely then freeze for up to 3 months in a container just large enough to hold mince.
